Mac ‘n Cheese (with 7g Carbs)

Have you cooked with Lupin flour yet?

I’m getting a bit tired of cooking with almond flour. I love the stuff, but it’s so caloric.

Some people bag on the fact that it comes from a legume and they get concerned with lectins.

Here’s my opinion on lectins:

We are designed to handle a fair bit of them, and they may actually make our gut STRONGER. Especially when you factor in the fiber that is in it.

If you ask me, it’s even better than cooking with almond flour, because you’re not dealing with copious amounts of omega 6 fatty acids.

But, I don’t want to sit here and “biochemistry” you to death.

The reality is that I am stoked to be one of the first to introduce a keto mac & cheese that is not made with garbage. There is not a single ingredient that you cannot pronounce in this stuff.

Even the cheese sauce is made from dehydrated cheddar cheese. Not whey protein, not milk protein solids, LEGIT cheddar cheese.

Those of you that know me know that I was overweight before.

There’s no denying that I like food. I just make SMART choices with what I eat, and that includes keeping my brain satisfied with the occasional treat.
